An October Afternoon in June

As most of my loyal readers know, I was added to the October Afternoon design team about two months ago. I am absolutely thrilled to be a member of this team! I loved October Afternoon's first product release - from Summer 2007 CHA - but the two collections released this winter absolutely blew me away. I was fortunate enough to have had the opportunity to work with the new products back in February, and made several samples for display in the October Afternoon booth at CHA. The fabulous Daydream and Detours lines are shipping to stores and kit clubs now and the design team got their hands on the new products this week. Needless to say, I dove right in! :)

First, I figured if it's an October Afternoon in June, I can get ready for Christmas in July :)

Now I'm off to finish prepping for our Cuban-themed supper club tonight...the picadillo empanadas need to be assembled! (More on that tomorrow...)

Scrapping Again

I have been so off this spring/early summer but it looks like I might be getting back to a routine of creating regularly again. I did three projects (one layout and two cards) for Scrapbook Destination using the new Black Market Paper Society Lucky 'n Love paper:




I've also done a bunch of layouts for submission, and I also dove into my recently-arrived October Afternoon product box, but that deserves a post of its own...stay tuned... :)

I Let Eli Stay Up Late...

so that he could finish reading the first chapter of Island of the Blue Dolphins. Yes, so that he could finish reading it! I am one proud mommy at the moment, and Eli is grinning from ear to ear (or was, when I finally tucked him in around 9:00 tonight). He can't wait to read Chapter 2 tomorrow to find out whether or not Karana's tribe will go to war with Captain Orlov and the Aleutians. Eli thinks they will because Captain Orlov is not nice, and, although Captain Orlov finally agreed to strike an equal bargain with Karana's tribe, Eli doesn't trust him. :)

Drumroll, Please...The Mini Album!

Let's pretend today is yesterday. I had every intention of posting this yesterday, but between being a chaperone at Eli's zoo field trip and watching a friend's son until dinnertime, I was beat, managed to get a near-migraine headache, and, therefore, lost my entire evening.

Here's the mini album. I'm not going to post all the pages, but I'll give you a sampling - this is no great work of art design-wise, but I'm loving the idea of having the whole story of our summer 2007 California road trip in one place!

Super Yummy Dinner

As many of you know, my "other" hobby is cooking. In fact, while I subscribe to three scrapbooking magazines, I get five cooking magazines. Tonight I took a recipe and changed it up a bit and it was so good I feel compelled to share. The original recipe is in the June/July issue of Everyday with Rachael Ray.

This recipe fed four, although it was so good we could have eaten more!

Ingredients:
  • 1 pound mild Italian sausage meat (not pre-formed sausages) - I used Whole Foods' sausage meat that they sell by the pound at their meat counter (now before you go all "Whole Paycheck" on me, this stuff is $5.00 a pound, so it's not that bad), which is not too salty, and has loads of yummy fennel seeds in it
  • Seedless red grapes (I used half a bag)
  • 2 red bell peppers, halved, seeded, and cut into large chunks
  • Balsamic vinegar
  • Olive oil
  • A large handful of flat-leaf (also called "Italian") parsley, roughly chopped
  • A large handful of basil leaves, roughly chopped
  • 1 cup ricotta cheese
  • 1 to 2 tablespoons honey
  • Salt
  • Pepper
  • Flatbread or flour tortillas
  • Skewers
  • Grill

Directions:

1. Form sausage meat into twelve meatballs. Thread meatballs on skewers.

2. Thread grapes on more skewers.

3. Toss pepper chunks in a bowl with a drizzle of olive oil and balsamic vinegar. Thread pepper chunks on still more skewers.

4. Toss flat-leaf parsley in a bowl with a drizzle of olive oil and a pinch of salt.

5. Mix together honey (add to taste - you don't want it too sweet) and ricotta, season with pepper.

6. Grill skewers, turning once, until peppers start to char, meatballs are cooked through, and grapes blister.

7. Put flatbread or tortillas on four plates. Top each flatbread or tortilla with some of the ricotta mixture, a heavy sprinkling of the parsley, three meatballs, and some of the grapes and peppers. Garnish with the basil.

Note: this can be eaten rolled up, or smaller chunks of flatbread/tortilla can be torn from the edge and used to scoop up small bites. Alternatively, the ingredients can be piled on the plate and the flatbread/tortilla served on the side.

I Think I'll Keep Him

I got this for Mother's Day, and promptly put it on the refrigerator. Every time I walk by and see it I cry. I know, I am a huge sap.


Meanwhile, tomorrow I will be taking Eli to the doctor. At his soccer game on Saturday he was goofing around with friends while on the sidelines, climbed a goal post, fell, smacked his foot, and ceased to be able to walk. Of course, I was tending to Sadie at the moment and missed seeing the event. We thought his foot was getting better, but it's now quite swollen and bruised and Eli thinks he might have a "hair fraction." I concur. We shall see what the x-ray and the doctor say. Eli was lamenting his predicament this evening. When I suggested that climbing the goal post might not have been the brightest of ideas, Eli responded with a very resigned, "I know. I'm the example. Now my friends will know not to do that." He didn't really like it when I burst into hysterics after that. Guess you have to be pain-free (or at least older than six) to find that funny.
